Oh....oh. The tables have shifted and Cesare is all too aware of it. Cesare knows very little about Natasha, even less than he thought he did, and now it seems she knows a considerable amount about him. At this point, at least in regard to information, she has the advantage. He tries to level the playing field a little and so, when he speaks, it is in Spanish. He spent most of his young life in Italy, yes, but his blood is Spanish. The Borgias are Catalan. Natasha may know a lot about him, yes, but she doesn't yet know everything. He would remind her of that.

The use of dear is deliberate, yet another reminder of her status and age versus his.
